Pumpkin Bread

A large round loaf of spiced pumpkin bread with chopped walnuts and optional raisins.

Ingredients:

  • 3 cups sifted all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3 cups granulated sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 can (16 ounces) pumpkin
  • 1 cup coarsely chopped raisins, optional
  • 1 cup chopped walnuts

Preparation:

Grease and flour a 10-inch fluted tube pan.

In a bowl, sift together the flour, baking powder and soda, spices, and salt.

In a large mixing bowl, combine sugar, oil, and eggs; stir until well blended. Stir pumpkin into the egg mixture. Gradually add sifted dry ingredients to the pumpkin and egg mixture, stirring well after each addition. Fold in walnuts and raisins if using. Spoon batter into prepared tube pan. Bake in a preheated 350° oven for about 1 hour and 15 to 20 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Remove from oven and cool on a rack for 10 minutes before removing from pan. Cool completely on rack before slicing.

Great recipe, Member entiat4

My family and I loved this bread! I put it in 4 smaller loaf pans. It takes less time to cook it that way and makes great gifts.
