Ingredients:
- prepared pie pastry for 9-inch pie shell
- 2 cups cooked pumpkin puree
- 1/2 teaspoon salt
- 1 cup brown sugar
- 2 tablespoons molasses
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 cup orange juice
- 3 eggs, beaten
Preparation:
Line pie plate with pastry. Set aside. Beat together the pumpkin, salt, sugar, molasses, spices, and orange juice. Taste and add more spices, if desired. Beat in eggs. Pour filling into prepared crust. Bake in a preheated 400deg; oven for 15 minutes. reduce heat to 350° and continue baking for about 45 minutes, or until a knife inserted in center comes out clean. Serve at room temperature with sweetened whipped cream.
