Apple Orange Nut Bread

This apple quick bread includes orange juice, raisins, and chopped nuts.

  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2/3 cup vegetable shortening
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon shredded orange peel
  • 2/3 cup orange juice
  • 2 1/2 cups coarsely grated peeled apples
  • 1 1/2 cups raisins
  • 1/2 cup chopped walnuts or pecans


Sift together flour, baking powder, baking soda and salt. In a large mixing bowl, cream shortening and sugar together until creamy. Beat in eggs until light and fluffy. Combine orange peel and orange juice, apple, raisins and nuts; add to sugar and egg mixture. Add flour mixture and stir until dry ingredients are just moistened.

Bake apple nut bread in 2 greased 9x5x3-inch loaf pans at 350° for 40 to 50 minutes or until bread tests done.
Makes 2 loaves of apple orange nut bread.

I followed the recipes except adding half margarine and half canola oil for shortening. The bread took much longer to bake and the results were not at all good. The bread had no flavor and was baked around the edges but not in the middle despite the longer baking time - perhaps some orange extract or something would have given it the flavor it was lacking. Will not make again!
