Chunky Soda Bread Squares

From Barb: Here is a wonderful recipe. This is truly comfort food.

Cook Time: 22 minutes

Ingredients:

  • 2-1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup butter or margarine, cut into large chunks
  • 1/2 cup buttermilk
  • 1 can (8.5 oz.) cream-style corn
  • 1 teaspoon paprika

Preparation:

Preheat oven to 400°. Spray an 8-inch square baking pan with nonstick cooking spray.

With a pastry blender, blend flour, baking powder and soda. Add butter, blend until the mixture resembles coarse crumbs. Add buttermilk and cream corn. Stir until mixture forms a ball. Lightly press into prepared pan. Sprinkle with paprika. Bake 20-22 mins. until wooden pick inserted in center of bread comes out clean. Cool a bit and cut into squares.
