Cook Time: 1 hour
Ingredients:
- 3 cups sifted regular flour
- 1/2 cup sugar
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 egg
- 1 cup milk
- 2/3 cup molasses
- 1/4 cup melted shortening, cooled
- 1 cup raisins
- 1/2 cup finely chopped walnuts
Preparation:
Into a large bowl, sift together sugar, salt. baking powder, soda, cinnamon and nutmeg.Beat egg slightly in a small bowl; stir in milk, molasses, and melted shortening; add to flour mixture all at once. Stir just until blended. Stir in raisins and walnuts. Pour into a well-greased 9x5x3-inch loaf pan. Bake at 350° for 1 hour, or until a wooden pick inserted in center of loaf comes out clean.
Cool raisin nut bread in pan on a wire rack 10 minutes. Loosen around edges with a knife; turn out onto rack and cool completely. Wrap in plastic wrap or foil and store overnight for easiest slicing.
