Festive Fruit and Nut Bread

Eggnog and candied fruits make this a great loaf to have on hand over the holidays.

Cook Time: 1 hour, 15 minutes

Ingredients:

  • 2 1/4 cups all-purpose flour, sift before measuring
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup chopped pecans
  • 1 cup diced mixed candied fruits
  • 2 eggs, beaten
  • 1 cup eggnog
  • 1/4 cup melted butter

Preparation:

Sift together the flour, baking powder, salt, and sugar; stir in pecans and fruit. Combine eggs, eggnog, and melted butter. Add egg mixture to the dry ingredients, mixing just until dry ingredients are moistened. Pour batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350° for about 1 1/4 hours, or until a wooden pick or cake tester inserted in center comes out clean. If desired, frost with a confectioners' sugar frosting or glaze and garnish with candied cherries.
