Spiced Raisin Quick Bread

Raisin bread is spiced with mace or nutmeg and lemon and vanilla extracts.

Cook Time: 50 minutes

Ingredients:

  • 3 tablespoons butter
  • 1 cup sugar
  • 3 eggs
  • 3/4 cup raisins or chopped dates
  • 1 tablespoon grated lemon peel
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground mace or nutmeg
  • 1/2 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • 1 cup milk

Preparation:

Cream butter and sugar. Add eggs, one and a time, beating well after each addition. Stir in raisins or dates and lemon peel. Sift together the flour, baking powder, salt, and mace or nutmeg.

In a 2-cup measure, combine lemon extract, vanilla, and milk. Add the sifted dry ingredients to the creamed mixture, alternating with milk mixture. Pour into a greased and floured 9x5x3-inch loaf pan. Bake at 350° for 45 to 50 minutes.
