Holiday Apricot Pecan Bread

A nice bread to take along to the party, made with chopped apricots, orange juice, and chopped nuts.

INGREDIENTS:

  • 3 cups baking mix - biscuit mix
  • 2/3 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1 egg
  • 1 cup orange juice
  • 1 cup chopped dried apricots*
  • 1/2 cup chopped pecans or walnuts

PREPARATION:

Combine the baking mix, sugar, flour, egg, and orange juice; beat with a wooden spoon until blended, about 30 seconds. Stir in chopped apricots and the pecans or walnuts.

Pour batter into a greased and floured 9x5-inch loaf pan.

Bake at 350° for 55 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

*To make chopping or snipping easier, toss dried fruit in flour or lightly oil the knife or spray with nonstick cooking spray.
