Mango Bread

This mango bread is flavored with cinnamon and pecans.

Ingredients:

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 3/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar
  • 1/2 teaspoon vanilla
  • 3 eggs
  • 2 cups diced mango
  • 1/2 cup chopped pecans or walnuts

Preparation:

Sift dry ingredients into a mixing bowl. Make a well and add remaining ingredients. Mix until well blended. Pour into a greased and floured 9 x 5 x 3 inch loaf pan and let stand 20 minutes. Bake at 350° for about 1 hour, or until a wooden pick or cake tester inserted in center comes out clean..

nothing wrong with this, as with all muffins and quick breads fill 3/4 of the pan full, cooking time was right on, wasn't watery, it cook perfectly,, i have it in the morning, warm with butter and fresh coffee
