Blueberry-Orange Bread

User Rating 5 Star Rating (1 Review)

This blueberry orange bread is a great choice for a summer morning get together or a party. Serve the bread with a cream cheese spread or flavored butter.

  • 2 tablespoons butter
  • 1/4 cup boiling water
  • 1/2 cup plus 2 tablespoons orange juice, divided
  • 1 tablespoon plus 1 teaspoon finely grated orange zest, divided
  • 1 large egg
  • 1 cup granulated sugar
  • 2 cups all-purpose flour, stirred before measuring
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 2 tablespoons honey

Put boiling water in a small boil; add butter and stir until melted. Add 1/2 cup of the orange juice and 1 tablespoon of the orange peel. Beat egg with sugar until well blended. Add sifted dry ingredients, alternating with orange liquid; beat until smooth. Fold in blueberries. Bake in a greased 9- x 5- x 3-inch loaf pan in a 325° oven for about 1 hour and 10 minutes, or until a toothpick or cake tester comes out clean when inserted into the center of the bread. Turn out onto a rack. Mix 2 tablespoons orange juice with 1 teaspoon rind and the honey. Drizzle the juice mixture over hot loaf; cool before serving.

New family favorite, Member sbuschnehring

Even though I live in northern Minnesota and have the good fortune to pick wild blueberries by the bucketful, I love this Southern Food recipe. The bread is moist and cakelike. It has fast become a family favorite.
