Peanut Butter Banana Bread

Elvis would have loved this peanut butter and banana quick bread!

Cook Time: 60 minutes

Ingredients:

  • 1 3/4 cups flour, sift before measuring
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 3/4 cup peanut butter, crunchy or smooth
  • 2/3 cup granulated sugar
  • 2 eggs, slightly beaten
  • 1 cup mashed bananas

Preparation:

Sift together flour, baking powder, soda, and salt; set aside. Cream shortening and peanut butter, then beat in sugar and eggs. Alternately add dry ingredients and bananas, stirring with a wooden spoon. Pour batter into well-greased and floured loaf pan and bake at 350° for 1 hour.

"Just tried out the recipe, very nice. I made a few tweaks for personal preference: -whole wheat flour (for fiber) -butter (because I didn't have shortening, heh) -used natural (unsweetened) peanut butter Anyway, with my changes, and assuming a load yields twelve slices, that makes the following per slice: 12.5g fat 2.5g fiber 5.5g protein 13.75g sugar Of course, the original would have less fiber and less fat. Anyway, thank you for the recipe, the combination of bananas and peanut butter is delightful!"
