This is a flavorful peach bread made with spiced peach cobbler flavors. A layer of sliced peaches over the top makes the quick bread loaf moist and attractive. This quick bread is just that—it comes together in no time. It's also totally delicious and makes an excellent breakfast, snack, dessert, or treat for visiting friends or family. Fun fact: the pureed peaches in the batter make for such an unexpected, delicious twist—and we bet you'll be a big fan!

You probably have all of the ingredients on hand—so no need to go out to pick out any rare ingredients—and the cinnamon is such a wonderful touch. If you have fresh peaches on hand, feel free to swap them for the canned!

The technique couldn't be simpler, and once it goes in the oven, you can just "set it and forget it." The crumb is so delicate and rich, and a slice toasted with a schmear of unsalted butter and a sprinkling of kosher salt takes this over the top.

You can even take this to the next level and make French toast with the slices as the bread starts to get stale ... but we bet your family and friends will gobble this up before you know it, so you may not even have leftovers! If you do, though, merely wrap it up in plastic wrap and keep it secure and the bread should last for a few days.

If you have gluten sensitivities, you can very easily swap the flour out for a GF-approved substitute. Baking soda is always gluten-free, but some brands of baking powder can contain gluten or wheat ,so be sure to check out the ingredients if you have any gluten sensitivities. If you're vegan or dairy-free, swap out butter and eggs for substitutions like plant-based butter or margarine or any type of egg substitute. This recipe is super customizable! 

Ingredients

  • 2 (15-ounce) cans sliced peaches, drained

  • 4 ounces (1/2 cup) unsalted butter, melted

  • 3 large eggs

  • 1 teaspoon pure vanilla extract

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon ground cinnamon

  • Cinnamon sugar, for topping

Steps to Make It

  1. Heat oven to 350 F. Grease and flour a 9 x 5 x 3-inch loaf pan.

  2. Save 10 to 12 of the peach slices from the drained peaches and set aside for garnish. Process the remaining slices until almost pureed. You should have about 1 cup or just slightly more.

  3. In a large mixing bowl, beat the processed peaches with the melted butter, eggs, and vanilla until well blended.

  4. Combine flour, sugar, baking powder, soda, salt, and the 1 teaspoon of cinnamon. Add the flour mixture to the first mixture, mixing until blended.

  5. Pour the batter into the prepared loaf pan. Slice each peach slice lengthwise into two thinner slices and arrange them, overlapping, on the top of the batter. Sprinkle with a little cinnamon sugar.

  6. Bake in the preheated oven for about 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  7. Cool in the pan on a rack for about 15 minutes.

  8. Remove from the pan to cool completely.
