Mustard Greens

Here's a recipe for mustard greens from a WV forum member.

Ingredients:

  • greens
  • 1 onion
  • 4 slices bacon

Preparation:

I normally cook mustard greens in 4 cups of water on medium heat. The amount of water depends on the amount of greens, but as long as you have about 2 inches about them, you're fine. Dice one onion and fry about 4 pieces of bacon; save the bacon grease. Crumble the bacon; add to the pot of greens. Take the remaining grease and stir in the onions; toss around just little. Once they start getting soft and a little brown on the edges, put those with the greens and bacon in the pot, Simmer for about 20 minutes if you want really tender greens.

"Mother, a Midwestern Farmer's daughter raised during the Depression used this recipe when Greens were in season all my growing life. I always topped mine with brown apple cider vinegar when served (a must for me)and I have that on the menu for Fathers Day.......Yes, they stink up the kitchen....Use the side burner on the grill and keep peace in the family.....Personally, I'm not much on adding sugar to them, some peole do. Mustard Greens are not as bitter as some others...Don't chop them like you get them in a can, thats gross ubless you put them in a dip or something like a spinach dip...Check out the vitamins and antioxidants, you will be amazed. Leave the bacon in the stock pot and don'tell anyone your secret."
