  • 2 c. cooked rice
  • 1/2 c. sugar
  • 2 eggs, slightly beaten
  • 2 c. milk
  • 1/2 tsp. vanilla
  • 1/4 c. raisins
  • 1/2 tsp. powdered cinnamon

Enjoyed this recipe a great deal. Had to cook a rice dish for my son's class and found this. I noted the other reviews about it not setting but being asian I knew adding more time would dry it out. In any case, I added 5 more minutes to the 25min recommended (stirred it half way through baking). I left it to cool for about 5 min which allowed it to set. What people don't realize is that it needs to be a little soggy - when it cools, it will stick better. If you bake it to the point that it looks like it's sticky, it's going to be dry. I also did the recommended milk to half whole and half skim. Turned out great. I don't even like rice pudding with raisin and I enjoyed it. Better yet, the kids loved it. Next time, I'll make it more fattening by doing whole milk all the way as this probably will make it creamer.
