Cook Time: 60 minutes
Ingredients:
- 1 c.rice
- 1 tsp. salt
- 4 c. boiling water
- 1/4 c. butter
- 1/2 c. confectioners' sugar
- 4 eggs
- 1/2 tsp. cinnamon
- 1 tsp. finely grated lemon peel
- 1/2 c. raisins
- 1/4 c. chopped nuts
Preparation:
Cook rice with the salt and 4 cups of boiling water for about 20 minutes, until tender, drain. Cream butter and sugar. Beat in eggs, one at a time. Add cinnamon, lemon peel, raisins, and chopped nuts. Mix well. Add cooked rice. Bake in a greased casserole at 350° until browned, about 1 hour. Serve hot or cold.Serves 6.
