Rice Kugel or Rice Pudding

This baked rice kugel is made with cooked rice, eggs, cinnamon, raisins, and chopped nuts.

Cook Time: 60 minutes

Ingredients:

  • 1 c.rice
  • 1 tsp. salt
  • 4 c. boiling water
  • 1/4 c. butter
  • 1/2 c. confectioners' sugar
  • 4 eggs
  • 1/2 tsp. cinnamon
  • 1 tsp. finely grated lemon peel
  • 1/2 c. raisins
  • 1/4 c. chopped nuts

Preparation:

Cook rice with the salt and 4 cups of boiling water for about 20 minutes, until tender, drain. Cream butter and sugar. Beat in eggs, one at a time. Add cinnamon, lemon peel, raisins, and chopped nuts. Mix well. Add cooked rice. Bake in a greased casserole at 350° until browned, about 1 hour. Serve hot or cold.
Serves 6.

"I am always looking for no wheat recipes. . This recipe is good but I will add vanilla next time. and maybe add dried apples instead of raisins. I only baked it for 1/2 hour."
