Cook Time: 30 minutes
Ingredients:
- 1 cup finely chopped onion
- 1/4 cup olive oil
- 1 cup uncooked rice
- 1 teaspoon salt
- 1 tablespoon chili powder
- 1 1/2 cups chicken broth
- 1 1/2 to 2 cups tomato juice
- 1/2 cup sliced chorizo
- 1/2 cup sliced sautéed mushrooms
Preparation:
In a large skillet over medium low heat, cook onions in oil for 2 to 3 minutes; add remaining ingredients (1 cup of the tomato juice) and bring to a boil. Cover and simmer 20 to 25 minutes, checking often and adding more tomato juice as necessary.Serves 4 to 6.
