Orange Rice

Orange rice with orange juice and orange peel, along with butter, celery, onion, thyme, and other seasonings.

Ingredients:

  • 3 tablespoons butter
  • 1/2 cup diced celery with leaves
  • 2 tablespoons chopped onion
  • 1 1/2 cups water
  • 1 cup orange juice
  • 2 tablespoons finely grated orange peel
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon dried leaf thyme
  • 1 cup uncooked long-grain rice

Preparation:

Melt butter in heavy saucepan; add celery and onion. Cook until onion is tender but not brown. Add water, orange juice, orange peel, salt, and thyme. Bring to a boil; slowly stir in rice. Cover and reduce heat to low; simmer for 25 minutes.
Orange rice serves 4 to 6.
