Cook Time: 1 hour
Ingredients:
- 3/4 cup long-grain rice
- 2 tablespoons vegetable oil
- 1/2 teaspoon turmeric
- 1/2 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 cup raisins
- 1 can condensed chicken broth with enough water to make 1 1/2 cups - or use 1 1/2 cups strong broth made with water -
- - and 2 bouillon cubes or equivalent granules or base)
Preparation:
In top of double boiler, heat oil and butter over low heat; stir in rice until well coated. Blend in the turmeric, curry powder, and salt. Stir in raisins. Stir water into rice mixture. Cover and cook over simmering water for 1 hour, or until rice is tender and liquid is absorbed.Serves 4.
