Green Rice Recipe

This green rice recipe is made with long grain rice, spinach, eggs, butter, shredded cheese, and seasonings.

Cook Time: 45 minutes

Ingredients:

  • 1 cup long grain rice
  • salted water
  • 2 eggs, well beaten
  • 3/4 cup milk
  • 1/4 cup melted butter
  • 1/4 cup shredded sharp Cheddar cheese
  • 1 tablespoon grated onion
  • 1/3 cup minced fresh parsley
  • 2/3 cup finely chopped fresh spinach
  • 1 teaspoon Worcestershire sauce
  • 1 1/4 teaspoons salt

Preparation:

Cook rice in boiling salted water, following package directions. Combine rice with the eggs, milk, butter, cheese, onion, parsley, spinach, Worcestershire sauce, and salt. Pour into a greased and floured 8-inch square baking dish. Place baking dish in a larger shallow pan and add water to about 1-inch depth. Bake in a 325° oven for about 45 minutes.
Serves 6 to 8.
