Tomato Rice With Pork

A great everyday skillet meal, made with brown rice and diced lean pork. Use a small roast of pork loin or lean boneless chops for the meat in this recipe.

Ingredients:

  • 1/2 cup brown rice
  • 1 tablespoon butter
  • 1 pound diced lean pork
  • 1/2 cup chopped onion
  • 1/2 teaspoon seasoned salt or Creole seasoning
  • 1/4 teaspoon pepper
  • 1 teaspoon Worcestershire sauce
  • 2 cups tomato juice

Preparation:

In a skillet, brown the rice lightly in the butter. Remove rice from skillet. Add the potk to the skillet and cook, stirring, until pork is browned. Add rice back to skillet with remaining ingredients. Cover and cook over low heat for about 50 to 60 minutes, stirring occasionally, until rice is tender.
Serves 4.
