Ingredients:
- 1 cup long-grain rice
- 10 oz pkg tiny green peas
- 1 cup diced (3/4 inch) chicken
- 1/4 cup diced (3/4 inch) celery
- 1/3 cup mayonnaise
- salt, to taste
- pepper, to taste
- romaine lettuce or salad greens
- sliced tomatoes
Preparation:
Cook rice according to package directions and cool completely. Cook peas according to package directions; drain and cool completely. In a large bowl toss together 3 cups of the cooked rice, the cooked peas, chicken, celery, mayonnaise, and salt and pepper, to taste. Serve on salad greens or a bed or romaine lettuce, and garnish with sliced tomatoes.Makes 6 servings.
