Cook Time: 55 minutes
Ingredients:
- 2 1/2 cups boiling water
- 1 teaspoon salt
- 1 1/4 cups uncooked long-grain rice
- 1/4 cup butter or margarine
- 1 1/2 teaspoons curry powder
- 1 1/2 cups frozen green peas
- 1 tablespoon chopped pimiento or roasted red pepper
Preparation:
In a large Dutch oven or covered casserole, combine boiling water, salt, rice, butter and curry powder. cover and bake at 375° for 55 minutes. Cook peas, drain, and stir into rice mixture with pimiento.Serves 6.
