Baked Rice Recipe

This is an easy baked rice with chicken broth, almonds and butter.

Cook Time: 40 minutes

Ingredients:

  • 3 cups boiling chicken broth
  • 1 1/2 teaspoons salt
  • 1 1/2 cups long grain rice, uncooked
  • 1/2 cup slivered almonds
  • 3 tablespoons butter

Preparation:

Combine boiling broth, salt, and rice in an ungreased 2 1/2-quart casserole or baking dish. Cover tightly with foil or lid, and bake at 350° for 30 to 40 minutes or until liquid is completely absorbed and rice is tender. Meanwhile, lightly brown almonds in the butter. Add almonds and butter to hot baked rice; toss to blend well.
Baked rice recipe serves 6.

"First time I have made baked rice - this is a great recipe. I didn't have 3 cups of chicken broth so used 3 bouillon cubes and 3 cups of boiling water instead - worked out nicely as a substitute. Although if you use this substitute, you may want to reduce the amount of salt added."
