Chile Rice CasseroleBaked Rice PilafSpring Pie with Green Rice
INGREDIENTS:
- 3/4 cup diced Muenster cheese or Monterey Jack
- 3/4 cup diced Gouda cheese
- 2 cups cooked rice
- 1/3 cup finely chopped green bell pepper
- 3 eggs separated
- 1 cup milk
- 1/2 teaspoon salt
- dash ground red pepper
PREPARATION:
In another bowl beat egg whites until stiff but not dry; fold into the cheese and rice mixture. Pour into a greased shallow 2-quart baking dish. Bake in a preheated 350° oven for about 35 minutes, or until browned and set.
Serves 4 to 6.
