Salmon Loaf

Salmon loaf with a little chopped onion, eggs, and bread crumbs.

Cook Time: 45 minutes

Ingredients:

  • 1 can (16 ounces) salmon, drained
  • 2 cups soft bread crumbs
  • 2 eggs, lightly beaten
  • 1/2 cup milk or evaporated milk
  • 2 tablespoons finely chopped onion
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon salt
  • dash pepper

Preparation:

Mash salmon; combine with remaining ingredients and put in a buttered loaf pan about 9 x 5 x 1-inch. Bake at 350° for 45 minutes, or until loaf is firm. Serves 4.
