Salmon and Swiss Pie

Salmon recipe with Swiss cheese and eggs is similar to a quiche.

Ingredients:

  • 1 small can or package (about 7 to 8 ounces)salmon, drained and flaked
  • 2 cups shredded Swiss cheese
  • 2 tablespoons grated onion
  • 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1 unbaked pie shell, 9-inch
  • 3 large eggs
  • 1 cup milk

Preparation:

Combine Swiss cheese, onion, flour and salt in a medium bowl; alternate layers of Swiss cheese mixture and flaked canned salmon in pie shell. In a medium mixing bowl, beat eggs with milk; pour over salmon and Swiss cheese layers in the pie shell. Bake pie at 450 for 12 minutes; reduce oven temperature to 325° and continue baking for 25 to 35 minutes longer, or until salmon and Swiss cheese pie is firm. Serves 6.
