This is an easy meal to prepare, with canned salmon and green beans. Add a potato dish to make a nice weeknight meal.
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon thyme leaves
- 1/8 teaspoon pepper
- 2 cups milk
- 2 cups thawed frozen cut green beans
- 1 can (16 ounces) salmon, drained and flaked
In a medium saucepan, melt butter; blend in flour, salt, thyme, and pepper. Remove from heat; gradually stir in milk. Return to heat. Cook, stirring constantly, until bubbly. Let boil for about 1 minute, stirring constantly. Stir in green beans and salmon. Turn mixture into a buttered 1 1/2-quart casserole. Cover and bake at 375° for 30 minutes, until hot and bubbly. Serves 4 to 6.
