Easy No-Cook Salsa
This easy salsa great for kids' lunches or parties.


  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can (4 ounces) diced green chiles
  • 1/4 cup thinly sliced green onion
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 tablespoons lemon or lime juice
  • 1/8 teaspoon pepper
  • 1 clove garlic, minced
  • 1/4 teaspoon salt, or to taste


Drain tomatoes, reserving only 1/4 cup of the juice. Combine tomatoes and juice with remaining ingredients; cover and chill at least 4 hours. Serve with tortilla chips.
Makes about 2 1/2 cups.

I had supper almost done, and went to get the salsa from the fridge. I had about a half an inch in the jar:( Googled fast salsa and found this. I didn't have any green chilies, and only had cilantro in a cube form. Made half the recipe and had no time to chill it. It was great. I put up what was left, about a fourth of a cup, so I can try it chilled tomorrow. Will definitely make again.
