Bea's Salsa

Here is my recipe for salsa. I don't usually measure anything, so I am approximating measurements for you. I just throw it all in the food processor or blender.

Ingredients:

  • 1 carrot
  • 1/4 onion
  • 1/2 tsp. minced garlic
  • 1 to 3 unseeded jalapenos, depending on how hot you like it
  • 1/2 seeded bell pepper
  • cilantro, 1/4 - 1/2 bunch
  • 1-2 Tbl. lemon juice
  • 3-4 cumin seeds
  • 1 can diced tomatoes, (I'm sure fresh tomatoes would work just fine)

Preparation:

Process the carrot until fine. Add remaining ingredients, except tomatoes and process. Add tomatoes and process for a few seconds, so that tomatoes remain chunky.

"I enjoyed this recipe very much! The cumin seed caught my eye since I enjoy indian and thai dishes. It gives just enough unique flavor to stand out but not overpower. Since Bea said she dosent measure I used it as a guide myself. I used 1 jalepeno for my coworkers tastes, however I would suggest using more for a little more kick. This is a wonderful recipe if you like a clean veggie flavor the carrot gave enough sweetness (a trick my italian grandma taught me long ago so it also caught my eye too!) I tried this over grilled chicken as well as a dip and it was wonderful! I defiantly will make it again!^_^"
