These lightly cooked double-decker sandwiches are a delicious treat.
Yield: Makes 4 Sandwiches
Ingredients:
- 8 slices bread, lightly toasted
- mayonnaise
- 1 large ripe avocado, peeled, halved, cut in 1/4-inch slices
- Creole seasoning or seasoned salt
- freshly ground black pepper
- 8 slices bacon, halved crosswise and partially cooked
- 2 tomatoes, thinly sliced
Preparation:
Heat oven to 425°.
Spread each toast slice with a thin layer of mayonnaise. Cover with overlapping avocado slices. Top the avocado layer with tomato slices and sprinkle with the seasoned salt and pepper. Top with bacon slices and arrangem bacon-side up, on a baking sheet.
Bake for 10 minutes, until heated and bacon is crisp. Top 4 of the bread slices with the remaining 4 slices (keeping bacon-sides up) to make 4 double decker open-faced sandwiches. Cut each into quarters. Serve with chips or tomato wedges.
