Corned Beef Sandwich with Coleslaw


Corned beef sandwich recipe is made with corned beef, coleslaw, and tomato slices.


  • 1 pound coleslaw, purchased or homemade
  • 2 teaspoons caraway seeds
  • 12 slices light pumpernickel bread
  • butter
  • 12 to 16 ounces sliced corned beef
  • 2 small tomatoes, thinly sliced (6 slices each)


Drain coleslaw; mix with caraway seeds. Spread bread lightly with butter. Dividing evenly, layer 6 slices of bread with corned beef, tomato slices, and coleslaw. Top with remaining 6 slices of bread. Cut sandwiches in half diagonally.
Serves 6.
