Beef Sausage Po' Boys

Contrary to popular belief, many Cajun dishes are fairly low in fat, not because they were "reduced" in the amount of fat, but because they just don't contain a lot of it. This is one of those dishes, rich in taste, but healthful.

Each serving of ground beef is only three ounces after cooking, and while the beef is cooked in oil (1 1/2 teaspoons per person) only about half that amount becomes part of the meat patty.

The rest is seasonings and lots of vegetables! (Plus one roll--use a whole grain roll if you want to make this flavorful dish even healthier; use ground turkey to further cut down on the fat content.)

Ingredients:

  • 1 1/2 pounds ground beef
  • 3/4 cup chopped onion
  • 1/3 cup chopped parsley
  • 3 cloves garlic, finely chopped
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon Tabasco sauce
  • 1/4 cup peanut oil
  • 1 1/2 cups thinly sliced onion, packed,
  • 1 1/2 cups thinly sliced green bell pepper, packed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 sandwich rolls
  • Garnishes: tomatoes, lettuce, pickles

Preparation:

Mix first nine ingredients and form into 6 sausage shapes, about the size of the sandwich rolls. Heat a large heavy skillet over medium-high heat and add the oil. When oil is hot, add the onion, bell pepper, salt and pepper. Cook for 5 minutes, stirring often, until vegetables are tender and softened; remove vegetables from pan with a slotted spoon, leaving skillet on burner and heat on. Add sausages back to the pan and cook for 5 minutes, turn, and cook 5 minutes longer. Serve the sausages on rolls with the sautéed vegetables and garnishes. More Tailgate Recipes:
