Most Americans eat a sandwich each day, as often as not because they are practical, portable, can be made ahead, keep fresh for hours, and are inexpensive to purchase. We don't really expect anything more surprising from our sandwiches than we do from our morning cereal. Yet, something as simple as caramelized onions can transform even a simple cheese sandwich into something memorable.
Yield: Serves 6
Ingredients:
- Pepper-Crusted Roast Beef, reserved from night 1*
- 1 baguette (about 16 ounces)
- 1/4 cup mayonnaise
- 2 teaspoons Creole mustard
- 1/4 teaspoon Tabasco Sauce (or Tabasco Chipotle Sauce)**
- Caramelized Onions reserved from night 2
Preparation:
Thinly slice the beef against the grain and on the diagonal. Set aside.
Cut the baguette crosswise into 4 portions. Slice each portion horizontally, cutting almost but not quite completely through to the other side.
In a bowl, combine the mayonnaise, mustard and Tabasco and spread the mixture over the bottom of each piece of baguette.
In a large skillet over a medium setting, heat the caramelized onions, stirring frequently to prevent them from scorching. If desired, toss the slices of beef in the skillet to warm them. Mound the beef and then onions on the baguette. Serve immediately.
