This tomato sauce is made with a little garlic, fresh tomatoes, and cream. Serve this sauce with chicken, pasta, or meatloaf.

Yield: 2 Cups
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 green onions, finely chopped (white part only)
- 3 large ripe tomatoes, peeled, seeded, finely chopped
- 1/2 cup heavy cream
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon ground red pepper
- 1/2 teaspoon dried leaf thyme
Preparation:
In a skillet over medium heat, heat the olive oil; add the chopped green onions. Cook, stirring, for 3 minutes, until softened. Add the garlic and cook for 1 minute longer. Add chopped tomato and bring to a simmer. Reduce heat and simmer for about 3 minutes, stirring constantly. Stir in the cream and seasonings. Simmer, stirring constantly, until slightly thickened. Serve over chicken, meatloaf, or pasta.
Makes 2 cups.
