Egg Sauce for Salmon Patties

An egg sauce recipe for salmon patties, made with hard-cooked eggs, bell pepper, lemon juice, and milk.

Cook Time: 5 minutes

Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • dash pepper
  • 1 cup milk
  • 2 hard-cooked eggs, chopped
  • 1 tablespoon finely chopped bell pepper
  • 1 tablespoon lemon juice

Preparation:

Melt butter in saucepan; add flour, salt, and pepper, blending until smooth. Cook, stirring, for 1 minute. Gradually stir in milk. Continue to cook, stirring constantly, until thickened. Add chopped egg, bell pepper, and lemon juice; heat thoroughly.
Makes about 1 1/2 cups sauce.
