Sausage Casserole

Sausage makes this a hearty macaroni and cheese, perfect for an everyday family meal.

  • 8 ounces macaroni, uncooked
  • 1 pound bulk sausage
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 2 cups shredded Cheddar cheese, divided


Cook macaroni in boiling salted water following package directions; drain and set aside. In a skillet, sauté sausage, onion, and green bell pepper. Pour off excess fat; add flour and salt, blending well. Gradually add milk. Continue to cook over low heat, stirring constantly, until thickened and bubbly. Stir in macaroni and 1 cup shredded Cheddar cheese.

Transfer macaroni and sausage casserole mixture to a lightly greased 1 1/2-quart casserole. Sprinkle remaining cheese over sausage casserole; bake at 400° for 25 to 30 minutes.
Sausage and macaroni casserole serves 4 to 6.

Similar to Grandma's hotel recipe, Member dunn_james

This recipe is the closest I've ever seen to my Grandmothers dish served at her resort hotel to the delight of young and old alike (Becker's Hotel in Old Forge,NY). It has always been my favorite comfort food and never stays around at a covered dish supper. There are a couple of differences in this recipe from Grammy Westfall's. The cheese was ""Old English cheese slices"" which is no longer available so I've gone to using shredded cheddar as well. The sausage is cooked thouroughly with the onions and peppers diced and added later as the sausage is nearly fully cooked . Then make a white sauce of the sausage,onions and peppers adding flour and milk little by little as the mixture cooks and thickens. In a casserole dish layer the macaroni then half of the cheese, macaroni again and the rest of the cheese then pour the white sauce over the top to completely cover the mac and cheese (we never tried mixing everything together before baking but I'm going to try it). Bake uncovered for 45 minutes or until bubbly at 400 degrees. This dish can be frozen in single servings and microwaved without a problem, also the whole thing can be made ahead of time and refrigerated until ready to bake and can bake at different temperatures if you have other things in the oven.
