Onion and Sausage Casserole

A flavorful sausage casserole with sweet onions and cheese.

Prep Time: 10 minutes

Cook Time: 35 minutes

Ingredients:

  • 3 large sweet onions, thinly sliced, about 5 cups sliced
  • 3/4 cup round buttery cracker crumbs
  • 1 pound bulk pork sausage, cooked and drained
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
  • 1 (2-ounce) jar diced pimiento, drained
  • 1/4 teaspoon seasoned salt
  • 1/2 cup (2 ounces) shredded Cheddar cheese

Preparation:

Arrange onions in a lightly greased 12x8x2-inch baking dish. Sprinkle with cracker crumbs. Combine remaining ingredients except cheese; spoon over onions. Cover and bake at 400° for 30 minutes. Uncover and sprinkle with cheese; bake an additional 5 minutes.
Sausage onion casserole serves 6.

"I LOVE sweet onions and this recipe is jammed packed with them! I did make 2 very slight changes. I used smoked sauage cut up in cubes and browned my onions and sauage. Was great with baked potatoes, I'm sure it'll be good over noodles too."
