Cook Time: 2 hours
Ingredients:
- 1 pound dry lima beans, soaked overnight in 8 cups water
- 1 pound bulk pork sausage
- 1/2 pound cubed cooked ham
- 1/2 cup chopped onion
- 1 small clove garlic, minced
- 1 can condensed golden mushroom soup
- 2 tablespoons ketchup
- 1 bay leaf
Preparation:
Put lima beans and soaking water in a Dutch oven; bring to a boil. Reduce heat, cover, and simmer for 1 1/2 hours. Drain, reserving 1 1/2 cups of liquid. In a large skillet, combine sausage, ham, and onion. Cook, breaking up sausage, until meat is browned and onion is tender; add garlic and cook for another 2 minutes. Drain off excess fat. Add meat mixture to lima beans in the Dutch oven. Stir in reserved lima bean liquid, the mushroom soup, ketchup, and bay leaf. Cover and simmer for 20 minutes longer.
Serves 6.
