Ingredients:
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 eggs
- 1/2 cup oysters, fresh or canned, rinsed and dried, coarsely chopped
- cocktail sauce
Preparation:
Heat oven to 400°. In a saucepan over medium-high heat, bring the water and butter to rolling boil; stir in flour and salt. Reduce heat to low and stir vigorously until
mixture forms a ball, about 1 minute; remove from heat. Beat in eggs, one
at a time; continue beating until smooth. Stir in the chopped oysters. Drop dough by
spoonfuls onto ungreased baking sheets. Bake 25 minutes, or until puffed
and golden. Serve hot with cocktail sauce.
Makes 4 to 5 dozen appetizers.
You may use about 6 ounces of crabmeat in place of the oysters, rinsed and squeezed dry.
