Cheesy Shrimp Puffs

These easy shrimp puffs can be prepared up to 24 hours in advance.

Prep Time: 12 minutes

Cook Time: 15 minutes

Total Time: 27 minutes


  • 1/2 cup butter
  • 2 cups shredded Cheddar cheese
  • 1 egg, separated
  • 30 bread squares
  • 30 medium shrimps, cooked, cleaned, and deveined


Cream butter and cheese. Blend in egg yolk. In a separate bowl, beat egg white until stiff peaks form. Fold beaten egg white into creamed mixture.

Arrange the bread squares on an ungreased cookie sheet. Top each bread square with one shrimp and cover with rounded teaspoonful of the cheese mixture. Bake at 350° for about 15 minutes, or until golden brown.

These can be prepared up to 24 hours in advance; keep refrigerated until cooking time. Serve hot. Makes 30 shrimp and cheese puff appetizers.

Brining and roasting extra large shrimp (Alton Brown's recipe on Food Network), seasoned with Old Bay, made for overall superlative flavor. Very thin Pepperidge Farm whole wheat bread, cut into heart shapes, worked well. The butter, cheddar, egg topping with a pinch of cayenne is the perfect partnering with the shrimp. This recipe is stellar - will use it often! Could substitute with lumb crab, use phyllo cups, same cheese/egg topping - it's very flexible as to what can be added. You don't see this recipe 'all over the place' - it's rather special! Thank you Dana for another one-der-full post!
