- 1/2 cup frozen pink lemonade or lemonade concentrate, thawed
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- dash ground black pepper
- 8 ounces medium cleaned and shelled shrimp
- 8 ounces scallops
- 1 package (9 ounces) frozen artichoke hearts
Combine lemonade concentrate, oil, salt, and pepper; pour into food storage bag. Add shrimp and scallops, turning bag gently to coat well. Refrigerate for 1 1/2 hours, turning occasionally.
Meanwhile, cook artichoke hearts following package directions. Drain and cool.
Remove the seafood from the refrigerator and drain marinade into a saucepan. Bring to a rolling boil and boil for 1 minute.
Soak wooden skewers in water for at least 10 minutes.
Thread 1 shrimp, 1 scallop, and 1 artichoke heart onto each skewer.
Broil 4 inches from heat for about 5 minutes, basting with the boiled marinade.
Turn and brush with more marinade; broil 4 to 5 minutes longer, or until seafood is cooked.
Makes about 2 dozen appetizer skewers.
