Dori's Seafood Kabobs

INGREDIENTS:

  • 1/2 cup frozen pink lemonade or lemonade concentrate, thawed
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • dash ground black pepper
  • 8 ounces medium cleaned and shelled shrimp
  • 8 ounces scallops
  • 1 package (9 ounces) frozen artichoke hearts

PREPARATION:

Combine lemonade concentrate, oil, salt, and pepper; pour into food storage bag. Add shrimp and scallops, turning bag gently to coat well. Refrigerate for 1 1/2 hours, turning occasionally.

Meanwhile, cook artichoke hearts following package directions. Drain and cool. Drain marinade into a cup; reserve. Soak wooden skewers in water for at least 10 minutes. Thread 1 shrimp, 1 scallop, and 1 artichoke heart onto each skewer. Broil 4 inches from heat for about 5 minutes, basting with marinade. Turn and brush with more marinade; broil 4 to 5 minutes longer, or until seafood is cooked.
Makes about 2 dozen appetizer skewers.
