These oyster puffs make a tasty snack for the game, or serve them at your next party. Feel free to use flaked crabmeat in place of the chopped oysters.
Ingredients:
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- dash cayenne pepper
- 4 large eggs
- 1/2 cup oysters, rinsed and squeezed dry, chopped
- cocktail sauce or tartar sauce
Preparation:
Heat oven to 400°. In a saucepan, bring the water and butter to a full boil; stir in flour, salt, and cayenne, and continue stirring vigorously over low heat until the
mixture forms a ball. This will take about 1 minute. Remove from the heat and beat in eggs, one
at a time. Continue beating until the batter is smooth. Stir in the chopped oysters. Drop dough by
slightly rounded teaspoonfuls onto ungreased cookie sheet. Bake until
puffed and golden, about 25 minutes. Serve hot with cocktail sauce.
