Fish Chowder

Fish Chowder
Use haddock in this fish chowder, or your own favorite.

Ingredients:

  • 1 1/2 pounds haddock or cod fillets, fresh or frozen
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • dash ground black pepper
  • 1/4 teaspoon sweet paprika
  • 1 1/2 cups diced peeled potato
  • 3/4 cup diced carrots
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk

Preparation:

Cut fish fillets into small pieces; put in a large saucepan or kettle with chicken broth, seasonings, and potatoes and carrots. Cook, covered, for about 15 minutes, until vegetables are tender. In a medium saucepan, sauté onion in butter until tender. Stir in flour until well blended. Gradually add milk, stirring constantly. Continue stirring and cooking until thickened. Add to cooked vegetables and fish; continue cooking for about 5 to 10 minutes, stirring frequently.
Fish chowder recipe serves 4.

It's not very often that your first time making something also turn out to be your ""keeper"" recipe but this one is for me. It is very, very good. I used the recipe as is except for using 5 semi-peeled red potatoes, 1 can of 2% evaporated milk instead of the 2 cups of milk and 2 cups of broth instead of 1. I also added 1/2 teaspoon tarragon. It was thick and delicious! Thanks for the great recipe. My hubby and I loved it. We will be making this again!
