Homemade Creole Seasoning

An easy Creole or Cajun seasoning recipe.

Ingredients:

  • 1/4 cup salt
  • 3 tablespoons granulated garlic or garlic powder
  • 3 tablespoons ground black pepper, freshly ground if possible
  • 1/8 teaspoon ground cayenne pepper, or to taste
  • 1 tablespoon paprika

Missing a few key ingredients, Member magnoliasouth

I presently live in Cajunland and Creole seasoning isn't just about spice. It's also about flavor and this one forgets the flavor, for the most part (the garlic though is right on). A good creole seasoning also definitely includes oregano and basil then maybe some thyme, cumin and coriander. It's important to remember Creole culinary history. The seasoning blend descends not just from the French, but also the Spanish, the Africans AND even the folks of the Caribbean. It's a mix of a variety of spices, not just a few. This recipe is a good start, but requires more.
