2 teaspoons celery salt

2 teaspoons ground ginger

1 teaspoon freshly ground black pepper

Steps to Make It

Combine all ingredients in a small bowl and blend well.

Spoon mixture into a small airtight container and label as Chicken Coating Mix.

Store in a cool dry place and use within six months.
Oven-Fried Chicken
- 1 1/2 teaspoons mix
- 3/4 cup unbleached flour
- 1/4 cup instant nonfat dry milk
- 2 teaspoon sugar
- 1/2 teaspoon salt
- 2/3 cup of hot water
- 2 tablespoons vegetable oil
- fryer chicken (about 3 pounds)

Combine ingredients in a medium bowl; mix until well blended and smooth.

Preheat the oven to 425 F. Dip cut-up fryer chicken (about 3 pounds total weight) pieces in the batter.

Place coated chicken pieces on a baking sheet and bake uncovered 40 to 50 minutes until chicken is golden brown and tender.
