Spiced Shrimp Pilau

Shimp pilau with rice, ginger, powder, butter, cumin, and other ingredients.

INGREDIENTS:

  • 1 1/2 pounds fresh or frozen medium shrimp, peeled and deveined
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon five-spice powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 3 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1/4 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1 fresh mild chile pepper, seeded and chopped
  • 1 1/2 cups long-grain rice
  • 3 1/4 cups chicken broth
  • 4 green onions, sliced
  • fresh chopped cilantro, for garnish

PREPARATION:

In a large bowl combine shrimp, gingerroot, coriander, five-spice powder, paprika, cumin, and turmeric. Cover and let stand while preparing rice. In a large saucepan heat butter and oil until butter is melted. Add onion, garlic, and chopped chile pepper. Sauté until onion is tender, about 5 minutes, then add rice. Add chicken broth. Bring to a boil; reduce heat and simmer, covered, for 10 minutes or until rice is almost done. Stir in shrimp mixture. Return to boiling; reduce heat. Cook, covered, about 5 minutes more or until shrimp turn pink and rice is tender. Arrange rice on serving platter, garnished with green onions and cilantro, if desired.
Makes 4 servings.
