Creamed Celery

Creamed celery with white sauce, green onions and almonds.

Ingredients:

  • 4 cups sliced celery, about 2 medium bunches
  • 4 green onions, sliced
  • 1/4 cup butter
  • 3 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/8 teaspoon pepper
  • 1/2 teaspoon Worcester sauce
  • 1/2 cup half-and-half
  • 1/4 cup slivered almonds, toasted

Preparation:

Sauté celery in butter for 8 minutes. Add sliced green onions and continue cooking for another 2 minutes, or until celery is crisp-tender.

Sprinkle flour over the vegetables and stir until well blended; add chicken broth. Continue cooking, stirring constantly, until sauce thickens and begins to bubble. Stir in pepper, Worcestershire sauce and cream; heat until hot, but not to boiling. Taste and add salt if necessary.
Spoon into a serving bowl and sprinkle creamed celery with toasted almonds.
Creamed celery recipe serves 6.
