Quick Island Chicken - Sweet and Sour Chicken

Quick Island Chicken

A flavorful pineapple barbecue sauce jazzes up this chicken. Serve the chicken with its sauce over rice or noodles.

Cook Time: 20 minutes

Total Time: 20 minutes

Yield: Serves 4

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 bell pepper, coarsely chopped
  • 1 small onion, coarsely chopped
  • 1 1/2 to 2 pounds boneless chicken breast halves or tenders
  • 1 cup barbecue sauce
  • 1 can (8 ounces) crushed pineapple, undrained
  • salt and pepper, to taste

Preparation:

Wash chicken and pat dry; cut into strips or 2-inch chunks. Sprinkle lightly with salt and pepper. Heat oil in a large skillet over medium heat. Add the chicken, bell pepper, and onion. Cook, stirring, until chicken is browned. Combine the remaining ingredients; pour over the chicken and vegetables and stir to combine. Bring to a boil; cover, reduce heat to low, and simmer for 8 to 12 minutes, or until chicken is cooked through.

Serve the chicken with hot cooked rice or noodles.

Serves 4.

Quickest Island Chicken, Member cckcck1

I made this for lunch today, but left off the barbecue sauce. I sauteed a red bell pepper, an onion and a chicken breast in olive oil, adding pineapple rings toward the end. With brown rice, this made a complete meal, and my husband asked me to make it again soon.
