Chicken in Orange Raisin Sauce

This chicken is cooked with a flavorful orange sauce with raisins.

Ingredients:

• 3 to 4 pounds chicken pieces
• 1/2 teaspoon salt, divided
• 1/4 cup butter
• 2 tablespoons flour
• 1/8 teaspoon ground cinnamon
• dash ground ginger
• 1 1/2 cups orange juice
• 1/2 cup raisins
• 1 cup orange sections
• 3 to 4 cups hot cooked rice

Preparation:

Wash chicken and pat dry. Sprinkle chicken with 1/4 teaspoon salt. In a skillet, melt butter over low heat; brown chicken lightly then remove chicken and set aside. In a small bowl, combine flour, remaining 1/4 teaspoon salt, cinnamon, and ginger. Stir mixture into the pan drippings until smooth. Gradually stir in orange juice. Continue to cook, stirring constantly, until sauce is smooth and bubbly and begins to thicken. Return chicken to the skillet; add raisins. Cover and cook over low heat for about 45 minutes, until chicken is tender and cooked through. Add orange sections; heat through.
Serve chicken with hot cooked rice and the sauce.
