Ingredients:
- 4 sweet Italian sausages
- 2 to 3 pounds chicken pieces
- 1 1/2 cups converted rice
- 3 cups chicken broth
- 1 can (8 ounces) tomato sauce
- 1 cup frozen peas
- 1 can (4 ounces) sliced mushrooms
- 1 green bell pepper, sliced in rings
Preparation:
In a large skillet, fry sausage until brown and cooked through. Remove and cut into 1/2-inch slices. Wash and dry chicken pieces; sprinkle chicken with salt and pepper. Brown chicken pieces on all sides in sausage drippings. Remove chicken from skillet. Add rice to drippings in skillet; cook until lightly browned, stirring constantly. Add back chicken and sausage, along with chicken broth and tomato sauce. Cover and simmer for 40 minutes, until liquid is absorbed and rice and chicken are tender. Stir in peas and mushrooms. Top with green bell pepper slices. Cover and simmer 5 minutes longer, until peas are tender.Serves 4 to 6.
